Caribbean Chicken and Rice


1Tablespoon Oil
3-4Chicken Breasts
3 Chopped Carrots
1Finely Chopped Onion
1Can Water Chestnuts
1Can Pineapple

Cut Chicken into bite size pieces. Cook in skillet over medium-high heat for five minutes stirring occasionally. Stir in the Carrots and onion. Cook until chicken is almost cooked through. Pour the sauce onto the chicken mixture add the water chestnuts and pineapple cook until chicken is done and the sauce is bubbly. Serve over warm rice.

Sauce
1Cup Ketchup
1/3Cup Molasses
1/3Cup Brown Sugar
4Tablespoons Apple Cider Vinegar
1Tablespoon Gluten Free Soy Sauce
Combine all ingredients together in small saucepan and bring to boil pour over chicken mixture.

Gluten Free Pancakes





2Eggs
1/3Cup Tapioca Flour
1/3Cup Coconut Flour
1Teaspoon Baking Powder
1/3Cup Sugar
1/4Cup Milk
2Tablespoons Cream Cheese

Mix ingredients with mixer until smooth. Spoon batter on to griddle. Cook flipping once until done. Makes 10.

Gluten Free Corn Bread






This Corn Bread is probably the easiest gluten free bread to make and it's delicious. Topped with avocado and tomatoes it makes a great side dish, or topped with melted butter and thick molasses it makes the perfect dessert. Corn Bread is an extremely versatile bread to make, and all that's ever left is crumbs.

1Cup Plain Corn Meal
1/2Cup Tapioca Flour
1/2Cup Coconut Flour
1Tablespoon Sugar
1Tablespoon Baking Powder
2 Eggs
3Tablespoons Plain Greek Yogurt
1Cup Milk

Preheat oven to 425 degrees. Mix ingredients with mixer until smooth. Pour into greased 8-inch square baking pan. Bake 20-25 minutes or until done.

Peanut butter chocolate chip cookies.

 




If you like Reese's Peanut Butter Cups or peanut butter cookies this is the recipe for you! These are probably my favorite cookies to bake. They are crazy fast and these cookies are wicked good. I'm not joking when i say that they are gone within a matter of minutes.

Fold in Chocolate Chips
Peanut Butter Chocolate Chip cookies
1Cup peanut butter
3/4Cup sugar
2 eggs
1/2Cup chocolate chips

Preheat oven to 350 degrees and grease a foil lined cookie sheet. Beat peanut butter, sugar and eggs with a mixer until combined. Fold in chocolate chips.  Use a spoon to drop one inch balls onto cookie sheet.
Bake for 10-13 minutes.

Hello World!

      On a late summer afternoon while my mother stole a nap, i tip toed into the kitchen. I pulled a chair over to the cool counter and climbed up, griping the chair so that i would not fall. I opened one of the dark wood cabinets and pulled a huge glass bowl from its depths. I set the heavy bowl down as softly as my tiny muscles could manage. The spice rack hung next to me, tempting me with all of its ground goodness and crushed mystery. I reached my little four year old hand over and grabbed a bottle with a red label. I unscrewed the cap in anticipation. Tiny little brown grains flowed into the transparent bowl engulfing me in the heavenly smell of nutmeg. I grabbed another bottle and then another and then another until the spice rack stood empty. I then gripped a spoon and i was stirring surrounded in a haze of spice, certain that i was going to make the most heavenly treat.
A shadow slowly slipped over the counter then my arm then my back. I turned to look at what had made the silent visitor, "mommy look, I'm cooking!".
        I have been cooking ever since. And as with all things cooking has been a journey, discovering new styles and ingredients along the way. My mom was recently diagnosed with Cliac Disease, and being the cook in the family i had the chance to learn and change my cooking styles and recipes. I realized that there was a need for good gluten free recipes. So i created this blog to share those gluten free recipes with you. I hope you enjoy and bon appetite!
